Khyar bi laban is a cucumber salad with yogurt. It is a vegetarian favorite. This recipe is perfect if you want to avoid meat for a while. Serve cold, and it is a super refreshing summer snack. It also makes a great side to any meat dish or eaten as an appetizer.
I tried this for the first time at Oasis. Oasis is a middle eastern style restaurant in Greenpoint, NY. I asked the chief, after having tried it, if he would share the recipe, and he did. Now I will share with you. Hope you enjoy.
Khyar bi Laban (Cucumber Yogurt Salad)
- 4 cucumbers, peeled and cut into thin slices
- 1 1/2 pints plain yogurt
- 2 tablespoons salt
- 1 tablespoon fresh mint
- 1 clove garlic
Combine all and serve.
